Barbecuing is a summertime favorite in America and across the world, everyone loves the taste of foods (in particular meats) that are cooked on an open fire. Barbecue is however very different from grilling.

Barbecue is based upon slow cooking with the addition of smoke. Many types of meats and poultry are simply delicious when barbecued. Personally I think poultry and pork are best suited to this type of cooking. There are various methods of cooking bbq, from using a dry rub to the type of sauce that is used (if any) however few is will argue that the most important aspect of good barbecue is slow cooking over several hours with the introduction of smoke and seasonings.

This barbecue chicken recipe explains through text and digital pictures my “home” bbq method. I have a weber grill with all the attachments including the rotisserie and smoker attachments which allow me to truly “smoke” my chicken, pork and beef.

Grilled vegetables are a great addition to any summertime outdoor meal. Simple, tasty and you won’t be dirtying any pots and pans.

Grilling is all about quick cooking over high direct heat which is almost always wood or charcoal based. This differs greatly from barbecuing in that bbq is based upon slow cooking which as also over charcoal or wood and also includes the element of smoke (more so than grilling).
