My culinary education was based on classic French cuisine and thus we stuck to classic recipes that have been prepared for many years, a salsa like the one listed here was not part of our curriculum. However once out of school (and armed with a understanding of ingredients and cooking technique) I quickly began to explore other cooking styles and ingredients. Today I love to use fresh relishes and salsa to flavor my food. They are very healthy, usually contain low amounts of fat and calories and add plenty of flavor.
