Caraway is a very important spice for German and Austrian cuisine where it is often combined with soups, meats, vegetables and goulashes. Caraway is synonymous with the bread “Caraway Rye Bread” which has been made popular by the Jewish community.

I often like to added caraway seeds as an alternative to rosemary in my roasted rosemary potatoes recipe. I find just a hint of caraway seeds gives the potatoes a mild buttery flavor that works very well. Caraway is also found in another of my recipes, apple cabbage saute where again it adds a smooth mild “buttery taste”. Caraway also works well in a pork roast where it can be rubbed into the flesh of the pork with garlic and course ground black pepper.
