Cayenne pepper is actually a blend of many small dried chilies, similar to chili powder but ground finer. Cayenne pepper is often used as a table condiment.

Cayenne pepper has a definite “flavor” much different than black pepper. Many cooks often think of cayenne or any “very hot chili” as simply “very very hot” yet cayenne pepper does have it’s own flavor. The trick to using this spice is to use it with care and add gradually (a good rule to follow when using any herb or spice). Once you reach the desired taste stop. The old saying goes you can always add more but can never take any out.

Cayenne pepper is a favorite ingredient in Cajun and Creole recipes which originates from Louisiana.
