Cooking With Chili Peppers - Chipotle Pepper

Chipotle peppers are my favorite pepper to cook with. A chipotle pepper is simply a smoked jalapeno pepper, it is sold either dried or canned with adobo sauce. I personally prefer to cook with the canned variety simply because the adobo sauce keeps the pepper soft and also adds a nice flavor to the peppers.
Chipotle peppers are very hot, and they can easily over power dishes and recipes. However, that said they can also be used very effectively to add depth and taste to many dishes. Like with any other pepper start slow and add gradually.
