Chinese 5 spice is a blend of dry spices that originated in China. It contains the following spices, star anise, Szechwan pepper, cinnamon, fennel and cloves. It is often used in the classic dish Peking Duck as a marinade. Chinese 5 spice is a wonderful spice to take advantage of, I used it often when cooking meats, fish, poultry and vegetables. It has a very pungent and strong flavor so use it sparingly. It can also be added to sauces or sprinkled over deep fried wantons.
