The spice cinnamon is very popular around the globe. In the middle east it is mixed with other dried spices to create a curry called “garam masala” in China it is also combined with other dry spices to form “Chinese 5 Spice”. In the states and in Europe it is widely used in breads and sweets. Mexican’s often add cinnamon to the sauce “mole” which has other interesting ingredients such as chocolate.
Today in the United States cassia (a close relative to cinnamon) is often sold as cinnamon. Cassia has a less refined flavor and is not a sweet and mild as cinnamon. In Britain however these spices are differentiated by law. Cinnamon is available in both stick form and ground. If you are able to grind your own cinnamon I am sure you will be able to taste the difference.
