Nutmeg is mainly used in sweet dishes and baked goods and is used extensively in the Middle East. Both nutmeg and mace come from the nutmeg tree which is native to the Spice Islands (the Moluccas). Nutmeg is the seed of the tree while the spice Mace is the protective outer shell surrounding the seed. Nutmeg is a strong spice and often added to classic French sauces such as “mornay sauce” and cream sauces. While a very small amount of nutmeg will certainly enhance the flavor of these sauce more times than not cooks will tend to over season with nutmeg resulting in a flavor that is too intense.
