Rosemary is another herb that is native to the Mediterranean country side. Rosemary thrives in hot arid places, it’s name means “dew by the sea”. Rosemary is a wonderful herb to use with meats, when cooking both at home or at work I often use a simple marinade of fresh rosemary, cracked black pepper, course salt, garlic and olive oil. This quick marinade can be used to flavor just about any meat and even some “meaty” fish such as tuna or sword fish. Rosemary has a faint pine like aroma that is wonderful, and the plant tends to even look a bit like a small pine tree. As a hobby I currently own a 2.5 year old live rosemary plant that I am training as a bonsai, but that is another story.
