Salt is widely used thought the world in most types of savory dishes, it has also been used for many years to preserve many meat and fish dishes. Today salt is available in many forms, from regular iodized table salt to sea salt, kosher salt and rock salt.

When cooking I like to use a salt that has a granular feel to it such as Kosher salt. This type of salt is more purified than table salt and also easier to control in your fingers. I also like the larger grains on meats and fish. These types of salts offer a more refined flavor and you will notice the difference.

There are several recipes that are largely based on salt, such as “roasted prime rib with rock salt” or “Chinese salt baked chicken”.
