This quick and easy cuban recipe was sent in by B.J who lives in California. The ground beef is flavored by capers, garlic and white wine.
Ingredients:
2 T Olive Oil
1 lb ground beef (15% fat)
1/2 lb ground pork
1 can deviled ham
1 lg. onion
1 green pepper
1 clove garlic or 1 T chopped from jar
3 T Capers w/liquid
1/2 cup white wine (wine you would drink)
3 1.5 oz boxes raisins
tomato ketchup
Method:
Preheat large skillet (with a lid) on medium-high heat. Add olive oil. Brown beef and pork. Add onion, peppers, garlic and cook until they sweat out (a couple minutes). Add capers with liquid, raisins and wine. Now this is very scientific…squirt four rings of ketchup around inside perimeter of skillet. Stir in. Reduce heat to medium. Cover and simmer for ten minutes. Remove lid, repeat ketchup squirt with two rings and simmer for ten minutes. Stir twice. Serve over a bed of white rice.
*This mix freezes very nicely-even with the rice on the bottom for a full meal reheat.
This also makes a killer stuffing for empanadas.
