Fat Free Salad Recipe - Fruited Greens With Mango Puree

This fat free fruited green salad is big on flavor and is sure to satisfy on a hot summer day. The vinaigrette is made from pureed fruit and rice vinegar and sweetened with honey (if needed).
Vinaigrette:
2 whole mango’s
1 cup fresh red raspberries
1/4 cup honey
2 cups orange juice
1/2 cup rice vinegar
Vinaigrette Method:
It is important to insure that the fruit used in this recipe is ripe, using mango’s that are not quite ripe will have a negative impact on the flavors and sweetness of the vinaigrette.
Place all ingredients in a blender and puree. Reserve until needed.
Fat Free Fruited Green Salad:
6 cups field greens (also known as spring mix)
1/2 cup julienne carrots
1/4 cup sliced strawberries
1/4 cup yellow raspberries (sub red if unavailable)
1/2 cup diced fresh pineapple
1/2 cup fresh orange segments (skin removed)
Fat Free Fruit Green Salad Method:
Place the greens in a large mixing bowl and combine with 3/4 cup of vinaigrette and toss well. Divide the greens among two large dinner plates or four small side salad plates. Top the salads with the carrots and remaining fruit and server.
Serves 2 large entree salads or 4 small side salads
