Greek Relish - Salsa - Recipe

This is a quick and easy recipe that is excellent on fish or chicken. It can be made up to one day before serving. This Greek relish recipe contains lots of fresh vegetables including cucumbers and tomatoes and is flavored with olive oil, herbs and kalamata olives.
1 cup diced fresh roma tomatoes
1/2 cup diced fresh cucumber (peeled and seeded)
1/4 cup diced fresh red onion
1/4 cup mined or diced kalamata olives
1/4 cup diced red bell pepper
2 tablespoons fresh oregano
1 tablespoon fresh chives
1 teaspoon freshly ground course black pepper
4 tablespoons extra virgin olive oil
Combine all ingredients in a stainless steel mixing bowl and toss well. Adjust seasoning if necessary with salt and pepper.
Makes just over 2 cups of Greek Relish
