Low carbohydrate or low carb (the more commonly used term) diets are health and nutritional food programs that restrict the intake of carbohydrates by substituting them with other edible ingredients such as proteins and fats. Since there is no consensus in defining a low carb diet, low carb diets can and do vary greatly from the very lax to the very rigid and prohibitive and everything in between.

The first known and well received low carb diet was structured in 1863 by William Banting, a morbidly obese undertaker in Great Britain who published a weight lose diet that eliminated bread, butter, milk, sugar, beer and potatoes. Banting’s revolutionary dieting ideas formed the basis for the dozens of low carb diets that are available today. The craze for low carb diets grew in giant leaps and bounds in the 1990s and with the publishing of “Dr. Atkins New Diet Revolution” and soon became the most widely used diet in the United States and ultimately in the entire world.

It is important to note that not all carbohydrates are alike nor are their effects on our bodies. The simple carbohydrates which are essentially the simple sugars that are quickly converted to glucose in our bodies and they are found in refined and processed foods such as white breads, sugary drinks and all sorts of candies, cookies and cakes. Other than providing rapid but short lived bursts of energy, simple carbohydrates offer little to no nutritional values for our bodies.

Complex carbohydrates, on the other hand, are much slower to digest and are found in healthful foods such as fruits, vegetables, whole grains and beans. Complex carbohydrates have lower caloric counts than simple carbohydrates; they are more satisfying and carry higher nutritional value because they are loaded with the vitamins and the minerals that their simple carbohydrate counterparts are not. In addition, complex carbohydrates bring with them a higher percentage of dietary fiber which helps eaters feel fuller for longer periods of time. For those reasons, good low carb diets promote a higher intake of complex carbohydrates while greatly reducing the simple carbohydrates.

Low carb recipes to accommodate the many different low carb diets are probably as widely available as any other recipes. With the ever growing number of diet fads in recent years and the rise in obesity as well as diabetes, there is no shortage of low carb recipes to pick and choose from. Knowing how to choose to best low carb recipes ones out of the mix can be quite confusing but the following are a few easy guidelines:

a) Good low carb recipes utilize plenty of fresh fruits and vegetables of all kinds but keep the starchy vegetables down to a minimum.
b) Good low carb recipes will make good use of whole grains rather than processed or bleached grains.
c) Good low carb recipes incorporate dried beans and lentils into their lists of ingredients.
d) Good low carb recipes will make use of liquid vegetable oils not the solid saturated animal fats.
e) Good low carb recipes make more use of pure water over other high fat and high carbohydrate broths.
f) Good low carb recipes will call for lean meat, skim milk, non-fat cheeses over any other.
g) Good low carb recipes will require the removal of skin from chicken and turkey.
h) Good low carb recipes keep the use of red meats down to a minimum while increasing the use of fish.
i) Good low carb recipes promote smaller portion per serving.
