Baked Sturgeon Lemon Pepper & Parsley
This is a very simple fish recipe that can also be modified with other large fish such as Salmon. But it will taste like a well established chef prepared it. A polish man gave it to me, He is 72, and has been cooking Sturgeon this way for thirty years.

Ingredients:

A slab of Sturgeon ( 1lb to 20lbs )
enough mayonnaise to coat top and bottom of sturgeon ( 2tbls to 2 cups )
enough onion to lay on top of mayonnaise ( 1/3 c to 1 1/2 c )
a little bit of parsley
lemon pepper

Method:

Preheat oven to 350. I use a glass baking pan to place the fish in. Roll out a piece of tin foil to wrap the fish in. Place some mayonnaise and onion on the tin foil, season the fish with the lemon pepper, then place the fish on top of the mayonnaise and onion. Coat the top of the fish with more mayonnaise, onion, and a little bit of parsley. Wrap the fish up and bake for one hour. You may have to bake longer for large quantities of fish. ENJOY!
