Wild Mushroom Sauce Recipe - Easy Morrel Sauce

The morrell mushroom is a wild mushroom with very bold and deep earthy flavors. This morrell mushroom sauce recipe is wonderful over chicken and pork. The recipe below was created for the home kitchen and uses a package sauce product from Knorr, if you have veal stock available use that instead of the Knorr product for a better sauce.

1 cup of knorr demi glace (prepared)
1 tablespoon unsalted butter
1 tablespoon minced shallots or yellow onions
1/2 cup sliced morrel mushrooms
3 tablespoons brandy
salt and pepper to taste

In a small sauce pan heat the knorr demi glace and simmer on a very low flame. In another sauce pan heat the butter over a medium flame and add the shallots or onions and saute for 2 minutes. Away from the stove add the brandy and the knorr demi glace, return the sauce pan to the stove top and reduce the flame to low and simmer for 15 minutes. Taste the sauce and adjust the seasonings with salt and pepper.

Makes just over 1 cup of sauce
