Customer Review: Great value for functional knives
Pros: High carbon steel holds a much sharper edge longer than stainless steel Functions almost as well as my Wusthof Classic santoku for far less money, and if I break one of these, who cares? Cons: Fit and finish isn’t great, there are visible imperfections in the polish of the blade and fit of the handles. Knives weren’t uniformly sharp from the factory. Does a person really need 4 santoku knives? Bottom Line: These are a great value for the dollar if you don’t mind carbon steel (these will stain/rust), and you know how to sharpen a knife. These are a great knife for the dollar. Yes, they need regular sharpening (all worthwhile knives do), and they will stain, especially if you put them in the dishwasher. These knives function, and that is what a knife is supposed to do. Too many people buy stain free knives so they look pretty, but all but the most expensive don’t hold an edge. I have a set of Henckels International (cheapest stainless steel set), that are useless next to these, even though the set was twice as much new. I like that these are high-carbon steel and take an excellent edge (the factory edge was terrible on mine). With the Spyderco Tri Angle Sharpmaker I was able to make these razor sharp in just a few minutes. I would of course recommend a Wusthof Classic over one of these, but the entire set of these cost half as much as a single Wusthof classic, and these take almost as good of an edge. I do have my Wusthof classic, but I use these for the dirty work. The only reason I bought these was that I got a great deal on them at the local warehouse club, so I paid about 1 fourth that of the Wusthof. Just remember to sharpen these right away, and then hone them on your steel regularly to maintain a nice sharp edge.
